My wife has made sloppy joes for decades, and they have always been very good.
Last night she changed up a bit by using Rotel, and it turned out really good.
Just the right amount of kick.
We cook for 2 here, so her recipe is for 2 persons
1/2 lb ground chuck
1/2 c. chopped onion
1/4 cup chopped bell pepper (optional)
1/4 Tsp. garlic powder
1/4 Tsp. black pepper
1 can Rotel Tomatoes & liquid; plus 1/4 cup water to rinse can
1 Heaping Tbsp. each: Heinz 57, Sweet Baby Rays Honey Chipotle, Molasses, and Prepared Mustard
2 Tbsp. Worcestershire Sauce
1/4 Cup Packed Brown Sugar
Saute chopped onions in skillet in a little oil
Add beef,black pepper & garlic powder & brown
Pour in Rotel and rinse water
Mix other ingredients in small bowl, and add to pan
Stir well, making sure to dissolve brown sugar
Cover and heat on medium-low heat for 20 mins.
Mix needs to bubble well, but not bubble too hard.
Stir occasionally so it does not stick/scorch
Remove cover, reduce heat, and simmer to desired thickness
Salt to taste
