Howdy Yall. My brother in law shot a deer in November of 2012. He was cleaning out his freezer the other day and found 2 leg quarters and some back strap. Is it to late to try and cook it or make jerky out of it? There wasnt much frost on some parts. But quite a bit on the back strap. Any suggestions? Thanks!

Cut off the frosty parts and grind or cook as usual. It's not a big deal, I've done it many times. About the only time it's no good is if the freezer burned flesh goes most or all the way through the meat. Otherwise, slice it off and use it. You might find it's a little drier than venison normally is (which means bone dry) but you can remedy that by using it in recipes that have sauces, gravies, soups, stews, and such, or wrapping in bacon or brushing it often with oil of some sort. I like sesame oil.
