Pecans have a high oil content and will eventually turn rancid at room temp.
I would suggest that you store some of those vacumn packed pecans in the freezer to get longest storage life.
Those look great Malaz, I'm jealous. I'm down to a 1 qt freezer bag of them.
First cold front I'm baking my favorite, Pecan Pie.:thumb:

I opened a pint today and made two loaves of banana nut bread and the pecans were still fresh and delicious.

The fact that they were vacum packed is why they were not rancid. Since there is hardly any oxygen it cant oxidize the oils as quick. These would be a great this to have as a survival prep. Protein and fat "BOMBS" these are! You can pull 200 calories out of just a handfull.

How did you vacuum pack the mason jars if you dont mind my asking?.....

The vacuum sealer I have has an acessory adapter that goes onto ball jars.
You vacuum it with the flat part on, then simply screw the ring part on afterwards.

I used my FoodSaver Jar sealer to vacuum pack those pecans. When you open a jar, it's cool to hear the sound it makes as it let's in the air.

I store my pecans in freezer bags in the freezer. The trick I learned was to put the freezer bags in paper lunch bags and they will never freezer burn. Don't know why but it works. I've used pecans that have been stored this way for two years and they were as good as fresh.
