I really feel for you. Although I don't have a spouse, I have family that I love dearly who just have no interest in prepping. I DO have two kids to take care of, and I am lucky that they are way into camping, hiking, being outdoors, and preparing for "everything".

Coming from a woman, the best way I can tell you to talk about it with her is the fact that you have young children. A mom wants to protect her kids with all her might! If you bring up prepping in the context of preparing for your local disasters (I'm not sure where you live...but that could be tornadoes, hurricanes, winter weather..whatever). That's a start, at least.

Ask her, "What happens if the weather goes bad and we have no food? Do you really want the kids to go without food/water/shelter/warmth?" If you put it like that, I can only think she will be somewhat more willing to go along with what you're trying to accomplish.
