My Hubby Kev told me yall wanted to receipe for the cassarole. Sorry I took so long getting it on here. My Mom passed away on 6-6-07. We are flying out to Spokane Wa. on Sat. So here ya go.

I dont use measuring cups so i just use what i need.

squash
onion
bread crumbs or bread
1 egg
1 small bowl of milk
pepper
cheese

boil squash and onion until cooked. you can add pepper also while boiling.
grade cheese while that is cooking.
when squash is done strain the water out.
pour into baking pan. mix 1 egg with 1 small bowl of milk. mix together.
sprinkle bread crumbs on top of squash. or tear bread into pieces and spread on top of squash. sprinkle 1/2 of the grated cheese on top of squash. then stir it up. spread squah out in pan. pour milk and egg mixture over squash.
sprikle the rest of the cheese on top. bake in oven until thickened. on 350.
you can season with anything you want. i use pepper. and sometimes tonys.

have fun.

Thanks for the recipe, I may be counting my squash before they are grown, but I will post pic of that casserole in the near future,...sounds good!:)

I picked the first of the seasons squash today and made that casserole.
Only change was I had to add diced garlic.:D
Was delicious.
Went perfect with the pull apart yeast bread.
Thanks again for posting.
