Some types I've seen particularly with fish and meat is to pack the flesh with salt on the outside and hang it on drying racks.
A friend told me this how they used to preserve a slab of beef in the Australian outback, as well as putting it in a cloth bag.
It would keep up to a week in very high temperatures.
