Anybody have any good rabbit recipes they like to share.Here in south texas their is alot of rabbits.Just wondering since ive heard their gooe eatin.

We have rabbit about once a week. Mostly we put it in the slow cooker with BBQ sauce or Cream of Mushroom soup; let it cook about 6 hours on low and then serve over noodles or mashed potatoes.

De-bone it, tenderize it, dip in egg, dip in seasoned flour and pan fry it. Mmmm. BTW--jack rabbit is just as good as a cotton tail (and has more meat). Be sure to tenderize the heck out of it.

Season flour with salt and pepper, dredge rabbit and brown well, remove the rabbit. Brown rough cut onions. Add carrots and root veggies your choice. Add Tarragon and thyme to taste. Add browned rabbit to the mix. Add apple cider for liquid to stew on a low-ish heat, don't let it boil down and burn, so have enough cider to keep adding if need be. Cover with heavy lid, and watch this stuff, don't let it burn. Cook until it's near falling apart. Serve with Calvados and/or good ale.

fricasee it lightly fry, bit of garlic salt and pepper thicken with a bit of flour add some wine and a drop of cream to make into a decent sauce. Tarragon or other herbs to taste.
also good with roadkill.

rabbit sauce piquant

Rabbit Sauce Piquant

1/4 cup vegetable oil
1 tablespoon bacon drippings
2 lb dressed rabbit, cut into servings places
1 tsp chopped garlic
1 ran Rotel tomatoes, chopped
1/4 tsp salt
1/4 tsp red pepper
1/8 tsp black pepper
1 chopped onion
1/2 chopped bell pepper
One 8 oz can tomato sauce
1 can beef gravy
1 tbs oyster sauce
1 tsp lemon juice
1 can sliced mushrooms
1/4 cup chopped green onions
1/4 cup chopped parsley

Season meat with salt, red pepper and black pepper.
Heat oil.
Brown meat well.
Remove meat and most of the oil, leaving brown residue in bottom of pot.
Add bacon drippings and heat.
Add onions and bell pepper. Stir well, scraping residue off bottom of pot. Saute until onions wilt.
Add garlic and tomato sauce. Simmer 15 minutes.
Add Rotel tomatoes and beef gravy. Simmer 15 minutes.
Add oyster sauce, lemon juice, mushrooms and browned rabbit.
Stir and simmer on low heat for 2 hours.
Add green onions and parsley.
Simmer 20 minutes.
Serve over rice.

Rabbit Sauce Piquant

1 large rabbit, cut in serving pieces
3 cups chopped onions
4 cups tomatoes
1 tbs minced garlic
1 cup minced parsley and onion tops
2 medium size pods hot pepper, minced
2 tbs salt
Pepper
Fat
If using wild rabbit, plunge into deep pot of boiling water and boil for 10 minutes. This is necessary in order to remove the wild taste. Fry each piece of rabbit until golden brown in deep fat. Remove rabbit and set aside, Retain 6-8 tablespoons fat.

Into fat add chopped onions and fry until onions begin to curl then add tomatoes, garlic and cook all until fat floats on top. Add fried rabbit, salt and pepper and pepper pods and cover with hot water. Cook slowly for 2 hours or until rabbit is tender, adding water as needed. Cook sauce until thick.

Just before serving add minced parsley and onion tops and cook 10 minutes longer. Serve rabbit and sauce on a platter accompanied by steamed rice.


Also good as the meat for any kind of bean soup.
Fantastic when smoked.

Use any whole chicken recipe, ex: put it in a pan and douse it with half a cup of white wine and sprinkle garlic, bacon bits and oregano over it and bake it for however long rabbits bake [chickens take about and hour and a half at 350 degrees].

Stick it in the crockpot and dump a can of cream of chicken soup and a can of water over it. Serve over mashed potatoes.

When I finally get settled on my property I was thinking about rabbits also. The only problem is the kids naming the cute little bunnies.

Here's the plan:
tell them "that one" must have run away.
Dinner tonight is chicken hybrid
