Was just whipping up a batch for breakfast and thought I'd share - this is a really easy recipe you can make with items from your pantry.

Ingredients:
1 box Jiffy Corn Muffin Mix
1/4 can crushed pineapple
1/4 c Coarse Ground Corn Meal (Bob's Red Mill) or any corn meal you have should be OK
2 eggs (or substitute 2 tbsp ground flax seeds in water for eggs)
1/3 c milk (fresh, canned or reconstituted)
1/4 tsp baking powder

Prepare the mix according to package directions, but double the eggs (as noted above). Stir in 8 heaping tsp each of corn meal and crushed pineapple, and 1/4 tsp baking powder. Pour into lined muffin tins and bake for 15-20 minutes at 400 (375 if you are using a toaster oven). Serve with butter if you have it - yum! :)

Pineapple sounds good, I will have to try that.

Sometimes I make the corn muffin mix and substitute creamed corn for the liquid. This is very tasty too!
