Microwave Poached Eggs

Cook Time 1 minute

1 egg
1/8 tsp white vinegar
1/2 cup water

- Add water and vinegar to a microwavable dish (I used a measuring cup)
- Crack egg into the water and gently poke yolk 4-5 times with a toothpick. Cover with plastic wrap.
- Microwave 1 minute. Check egg and cook an additional 15-20 seconds if needed.
- Remove from water immediately to stop it from cooking.

Serve on toast or however you like it.

I tried something similar last week:

Microwave Scramble
1/3 c Ham slices torn into 1" pieces
1/3 c Mushrooms
3 Eggs
1/4 c Shredded Cheese

Put ham, eggs and mushrooms in microwave safe bowl. Stir yolks with fork.
Microwave on high for 2 1/2 min or until eggs are done on outside of bowl, but runny in the middle of the bowl. Add cheese and stir. Microwave another 30-45 sec.
