I like alot of Jewish food but that stuff is like eating a cats behind. Sorry but fish except maybe sardines in mustard or olive oil don't keep to well.

I am Norwegian and Lutefisk takes time to get to know haha. weeeeew You could prob go with either one Vic. Dried fish will save for a long time. Buy some nose plugs though.

Lutefisk (lutfisk) (pronounced [lʉːtəfɪsk] in Southern Norway, [lʉːtfɪsk] in Central and Northern Norway, Sweden and the Swedish-speaking areas in Finland (lipeäkala in Finnish)) is a traditional dish of the Nordic countries made from stockfish (air-dried whitefish) or dried/salted whitefish (klippfisk) and soda lye (lut). Its name literally means "lye fish", because it is made with caustic soda or potash lye.

Lutefisk is made from air-dried or salted/dried whitefish (normally cod, but ling is also used), prepared with lye, in a sequence of particular treatments. The watering steps of these treatments differs slightly for salted/dried whitefish because of its high salt content. The first treatment is to soak the stockfish in cold water for five to six days (with the water changed daily). The saturated stockfish is then soaked in an unchanged solution of cold water and lye for an additional two days. The fish will swell during this soaking, attaining an even larger size than in its original (undried) state, while its protein content decreases by more than 50 percent, producing its famous jelly-like consistency. When this treatment is finished, the fish (saturated with lye) has a pH value of 11–12, and is therefore caustic. To make the fish edible, a final treatment of yet another four to six days of soaking in cold water (also changed daily) is needed. Eventually, the lutefisk is ready to be cooked.

Lutefisk: Just Say No.

There is a carol here that might tell you what you're in for.

Canned fish is better than either lutefisk or gefilte fish because it's canned, tastes better and will last longer. Lutefisk is generally sold like other fish in plastic trays, and gefilte fish is basically fish 'meatballs'.

Lutefisk takes me back. Mom's family was Norwegian and so we often had lefsa and lutefisk. I'd rather eat my lefsa with brown sugar and butter but I did have at least one rolled up with lutefisk just to make the family happy.

I haven't had any in years. I'll have to pick some up and see if it was a terrible as I remember.:zombie

There is an alternative....

A=Salted Cod (AKA: baccala if you are Italian or baccalau if you are hispanic).

Stuff lasts forever. Just re-hydrate by soaking in water for a few hours , then bake/broil.

Not too bad, not all that "fishy" after you soak it and taste is pretty good....

In this case I must agree with Murph. Salted Cod will last along time and is not as bad as the other two. Lefsa is a treat but the Lutefisk is not to my liking. It looks like a body fluid that comes out of my nose during a cold and smells like my Big Black Dog coming out of the lake in the middle of summer. Salted Cod and mash potatoes is a great meal just be sure to use real butter on the potatoes.

Lutefisk would not be the best survival food, but the raw material for lutefisk is excellent.
Dried cod can be stored for decades and still be edible. I have made bacalao and lutefisk from 8 year old cod and it was excellent!

There is great dscussion about the origins of lutefisk, but the best theory is that it came to be after the city fire in Bergen in 1170. All harbor storages went up in flames wich resulted in famine. Desperate people scavenged through the ruins and found remnants of dried fish that had reacted with the ash. (lye). They rinsed the fish in water, cooked it and it became lutefisk.

Getting hungry from all this talk. Thank god its lutefisk season again in a months time! Mmmmm!
