Seems like most of those 30+ day buckets of freeze dried/dehydrated emergency survival food pack the items in pouches containing multiple servings (4-6 servings seems like the norm). Are there any buckets where the items are packed in single serving or double serving pouches, so that one or two people wouldn't have to worry too much about leftovers?

servings are not actual servings that you eat. They are units of nutrition. You would need to eat 4-6 servings to feel full. Look at the calories, I would expect a meal to have about 1000 calories, typical servings have about 100-250 calories.

I recommend you purchase one of the 30 day kits with the intention of trying what you like. You will get a much better understanding of them. Plus you will find items you like better so when you go to order the real deal you can order what you want.

Go by calories, never "servings". If you look at it that way, most of those buckets are barely a week's supply. And those "year supply" kits are more like a 6-8 month supply. Calculate the price accordingly and they turn out to be a very poor bargain in most cases.
