I'm not an expert as I HATE squash, but I would think that canning it would make it really sort of goopey and kind of gross. I don't see why you couldn't can it however, though I wouldn't.
Pumpkins and winter squash has to be pressure canned.
Only in chunk form. Fill jar loosly with chunks, add boiling water and process pints for 55mins, qts for 90 mins,.....at 10lbs pressure.
I used to get a wheelbarrow full from my brother in the fall. I chunked them up without the shell and froze bags of them. Thaw, add some water, boil and mash. Good stuff. I would love to hear if anyone dehydrates them and how they do.
