Ok, so about 6 months ago i bought 100lbs rice, 50 lbs pinto beans. I froze all the rice in 20 lb bags in the freezer for a week or so to kill any bugs/eggs. But I didnt dry them out or anything after I took them out of the freezer, I just poured them into the mylar bags in my buckets and threw in o2 absorbers(probably over killled on the o2 absorbers, put in lots), and sealed them up. I read on here somewhere where it said you should let it sit out and dry out for a while after you take it out of the freezer..., did I mess up, should I open on of the bags and check my rice for mold or somthing? Let me know, I dont want to open it up if I dont have to, but I wouldlike to know now, and not later when I really need the food. Thanks in advance.

Better to open one or two now, than to run the risk of your food investment possibly ruined. Better to be safe and sorry when it comes to your survival. Good luck...

Do you think its been long enough, so if it is going to be ruined it will already be done? Does that make sense? So if I open it now, and its ok, and I reseal it with new o2 absorbers its good to go?

CHECK ...stop wondering!!! You can re-seal a mylar bag if you didn't waste the top. I would imagine there would have been a small amount of residual moisture from being in the freezer- at any rate- open the bags up, dump them out in a large, clean rubbermaid container, check for clumps, mold, etc.....if it's fine, give it a day to dry out even more....stir it up a few times, then re-seal. No big deal.

depends on the humidity in your area. If it was indoors, more than likely if you kept them in sealed bags, there wont be much of an moisture issue if you let them cool back down to room temp. least that is what i read on some food storage FAQ on another forum.
but to be safe you can re-check and re-seal, that's the cool thing about mylar!
