The cubes are fine, but I have several containers of powder that I'm afraid to open as it might be a long time before it's finished. Any experiences?

I think the cubes are a better choice, unless you keep a dessicant pack in the loose powder.

I have a tiny one I took out of a beef jerky pack I just ate. I assume they don't stop working when you eat the food. Do you think this would work?

Depends on how long they're exposed to air and what the relative humidity is.
New ones are pretty cheap:
