I've looked through Carrots Love Tomatoes, and somehow I've missed this information.

I will be interplanting planting corn and pole beans, with the beans using the cornstalk as support (maybe with a few extra poles too).

The recommended corn spacing is 2.5' - 3'

The recommended bean spacing is 6".

How far apart should I plant the corn if the beans are interplanted with them?

that place tells you exactly how to do it & how to space them... even has diagrams to show you.. lol

native americans also planted jerusalem artichokes (aka sunchokes) and sunflowers, too.. in case you wanted to go all out with a native american-style garden.

What I do is plant the bean kind of in a circle around the corn (about 3 or 4 beans per corn plant). I also do squash/pumpkins in with the corn and beans....the old "3 sisters" technique. The corn provides the support for the beans, the beans fix nitrogen to help "feed" the corn, and the squash/pumpkin plants shade the soil, helping reduce evaporation and keeping the soil from getting too hot.

good to know. i'll be trying a three sisters this year.

on a related note:
here's a vid of thesurvivalpodcast's jack spirko and his three sisters garden. he replaced the corn with sunflowers. seemed to work pretty well. the stalks of sunflowers appear to be just as strong as corn stalks.
