For me? I grew up on that bright yellow mid-western corn belt corn, "Illini super sweet" is what I go with!

OMG! That's the only way to eat it! Never did much care for corn but started a garden years ago and tried it straight off the cob and it was like a whole different world! I absolutely loved it!Anyone eat it raw? Most all corn is sweeter that way, juicer too.

How long are you blanching? I blanch mine for about 90 seconds and it tastes much better than when I used to follow the directions of 2-3 minutes. I have frozen corn for many years as it is a favorite in this house.I have also found that sometimes a late garden is not a bad deal. It seems to catch up to the close to the same harvest time as the early. Warmer soil means quicker germination, with corn less time for the birds to eat the seed.So e of the best sweet corn I have ever had was bodacious and incredible….and th8s was in the fall and winter. Old timer taught us how to blanch and freeze these two varieties…just as good as straight off the cob…unfortunately our is never as good as his was when he was alive…it’s really good, just not his. Peaches and cream straight from the garden is good.
He also swore the quality of the corn had to do more with ground temp when planted than anything else..he had it down to an exact science….in his mind anyway and you couldn’t argue the result.

As long as the ears aren’t big 2 min max and then straight to ice water, larger ears or bigger batches add about a minute. I’ve seen as long as 4 minutes from some people and I have played around trying to match the quality of what we got from Evert and I haven’t succeeded. I'm going to try your 90 seconds combined with freeze drying this year.
