Hey everyone, newbie here. Been reading the forums for a while and have learned way more than I ever planned to. I just started the whole process of storing food in buckets with mylar. I watched several video's and read many forum threads before attempting this myself. However, there is one thing I had a question about. After sealing the mylar bags I noticed some bags still had air left in them, and some shrunk down so tight there was no air in them. So, is it necessarily bad if there is still air left in some of the bags? I tried using the search box here, but when I put in "air left in bag" I got a thread talking about porn left out in the woods, and other odd threads, but not my answer. Can anyone help or have advice? Should I buy more oxygen absorbers and try to reseal the ones with air left in them? Thanks in advance!

Not all of mine pull down tight. In some cases that is a good thing, because certain foods can poke tiny holes in the mylar. As long as you think the O2 absorbers were working, you should be okay.

I had one bucket that I wasn't confident the mylar sealed well, so I threw an extra O2 absorber in the bucket and closed it up.

Also remember that O2 absorners don't absorb air. They absorb oxygen. And seeing how the air consists mostly of nitrogen(roughly 80%) and only about 20% is actually O2, then sometimes it will seem like the absorbers aren't working. But in reality, it's probably just the left over nitrogen in the bag.

I have a few bags that didn't create a vacuum after sealing. I checked the seal by placing my ear near it and gently applying pressure to the bag to see if I could hear any gas escaping.

If you have a vacuum sealer it's an easy fix. Cut a small corner off the bag, suck out the air, and seal. Problem solved.

The two enemies of food is Oxygen and Light. Within air there is only about 20% oxygen which your absorbers will take care of. Some "Air" in there won't be a problem, 80% nitrogen that is not harmful to your food.

I have noticed after time my lids on the buckets sink in but not much.

Ahhh, I didn't think about the nitrogen being left. Thanks so much for all the answers! Everyone on this site is so helpful - I really appreciate it.

Sometimes even the thickness of the mylar will make a difference. i did a batch about a year ago w/ some thin bags and they sucked right down....tight

Just did a batch 2 days ago w/ some thicker bags and they didnt suck down as much..def look like it reduced the amt of air though
