that does look to be a very handy blade profile in a knife. I have several older knives shaped that way in carbon steel I use a lot.
I would not have a problem skinning with that blade as it is very pointed and looks handy for sliding under the skin of a deer. I have never really found the allure of the wide, curved skinning knives except on very large animals like cattle. even then I use a pointed knife to make opening cuts from vent to hocks and down the front legs etc.
I really think that is a good multi purpose blade.
I find it hard to believe they’ve changed that much!
Yes they are light weight and have a plastic handle, but that thin blade can get very sharp and it can process quite a bit of food quickly and easily when you’re doing you fall canning!
I may have to try some of their kitchen line! I still have a couple of them from when they did kitchen knives years ago. CS seems to always give me my money’s worth!
