Unplanned purchase at the grocery store today after church - they had perogies on sale for $1.49 a box. One of the kinds was Jalapeno Sharp Cheddar. I started making them when I got home but then I saw on the box a picture with a link to the recipe for Ultimate Pierogy Nachos.

I sauted the pierogies as normal. Then I took about 1 c. of black beans, drained, and cooked them briefly. I misunderstood the directions and thought I'd be baking these, but no, only broiling them for 30-45 seconds. So next time I won't drain the black beans.

I put the pierogies in an oven safe dish, sprinkled with the beans and montery cheese. Let them broil for about 45 seconds until the cheese started to brown.

Topped with pico sauce (diced tomatoes, mostly drained, with cilantro and lime juice), jalepenos, and sour cream.

Today was the last of the ribs from last Sunday's smoking adventures. Today's were the St. Louis style. With Julienne potatoes and mixed vegetables. Dessert will either be carrot cake or brownies. Both are in the kitchen.

Carnitas made into simple burritos - meat, pico de gallo, and cheese. Pot of Elderberry Tea and a pack of Milano Cookies finished it up.

We are having spicy orange-pork stir fry with with noodles. One of hubby's employees let us know she would have her famous egg rolls for sale today and we planned ahead.

Just getting ready to throw some marinated pork steaks on the grill, gonna use some home canned taters seasoned the way we like them as a side along with asperagus. It all just fits and takes a little attention to get things done at the same time, but is worth it.

Lunch today was the $6 now $7 any burger special (thanks 1070!) at the favorites sports bar & grill. Got to watch a little of the Grapefruit League as well: Baltimore and Philadelphia. Then it was back to the office for an afternoon of calls.

Tonight will be chicken.

Ours are of the el pastor variety. Shredded cabbage and lettuce, pico and pickled radishes for us. Knock off El Pollo Loco bbq black beans and chips with guac on the side.
