Default Drying pineapple

Been buying for a buck a piece here in the north.
Takes forever to dry quarter inch slices. A week in the dryer fan and 120 degrees and they’re still not dry.

Fresh pineapple I assume?

I just did canned pineapple, and it took maybe a day. It didn't need that long - it was probably done a lot earlier.

Turned out very nice.

If you are using fresh, would you have better luck if you cooked it first? I don't know.

You might be on to something. Maybe pressure can the fresh first since the store bought pineapple is processed? Then you'll have pineapple stored two ways, canned and dried. Or maybe steam it a bit so the juices (and their flavor) won't all leach out and then dry it?

Just thinking out loud....
