When I get a new iphone every few years, I backup the old one on my PC, then restore that backup to the new iphone. Anything you don't want to transfer you can manually delete before making the backup. It's easier to delete things on the phone than it is to try and do it connected to a PC.
Once you're satisfied with the new phone, get the old phone and go to settings->general->reset->erase all content and settings to reset the phone to default settings.

I've done this with my last 2 iphones, and was able to sell both old ones on ebay for enough to cover the cost of upgrading, after renewing my contract. I know people who balk at renewing their contracts to get a new phone. Then I point out they've been with the same carrier for a decade and aren't looking at switching, so what are the worried about?

A few things....iTunes sucks really, really bad. Moving my chosen music to my phone never works right, I end up with half my music listed, but not available. And no, I am NOT going to just go through and choose several hundred songs to download, when they should have synched already.

You donít use iTunes to back up an iPhone, you use iCloud.

ITunes exists in many places...but you donít have iTunes on your iOS devices, you have an app called Music, that accesses your iTunes account.

All things Yahoo should be banned. IMHO, using Yahoo anything is like opening the gates of Hell into your machine. It is like mainstreaming malware.

iCloud free is only 5GB, and the backup needed could be over 100GB... besides transferring that much data over the air might be a problem to someone, being slow and cost a lot.

I used Mediamonkey to organise and sync my music library. However I haven't bothered to do it for a few years now, I have selected albums stored on my Plex server and I can stream them when I want. Back in the old days Mediamonkey was better music organizer than iTunes (at least in Windows).

I don't know if current iTunes lets you only sync selected albums to the iDevice these days, last time I used it there was only whole library sync and Mediamonkey let me sync and remove only those albums I wanted.

I gave a friend an old phone - I think it was an iPhone 6. Verizon said they couldn't transfer it for her for some obscure Apple/Verizon reason. They probably just wanted to sell her a new phone. I think it was BS because I know people who are still using iPhone 6.

Only thing I can see different is the Operating System and the camera - the new cameras are pretty good - still not as good as a good SLR but a lot handier and do an adequate job.

As far as what to back up, I just back up the whole thing, use what I want, as time goes on, delete the rest.

By the way - I hate cell phones and actually don't carry mine much. Would probably only use it to call roadside service if I got a flat. And as far as internet use, I can't use them as a computer - keyboard is too small and access is too expensive. If you want to do that, save your nickels and get an iPad Pro and hook it up to a wifi, not the phone signal.
