Homemade meatloaf (the craziest I have ever made) with ground beef, mild sausage, onions, celery, mushrooms, green peppers, ketchup, Dijon mustard, panko bread crumbs soaked in milk, eggs and seasonings with sliced jalapeno peppers and ketchup on top.

Making mashed potatoes and gravy to go with it.

I love all types of meatloaf! Your's sounds great but what do you mean by "mild sausage"? I guess I mean is it pork, beef, Italian sausage, Polish....just curious.

Made a bunch of bean, cheese, and rice burritos. One for now (it was pretty good) and the rest will be for lunch this week at work.

A very simple but surprisingly delicious supper.

I simply heated a can of chili beans. Put about half the can in a bowl with a dollop of sour cream. Wow! That was really good. It did need those little corn chips. I'll have to put them on the grocery list.
