That's what I do too. I ask the butcher to trim it a bit and he always gets it just perfect for burgers. Still juicy, not too greasy, and not as much shrinkage or flareups.

A quick note about salt and sugar. Do NOT use an O2 absorber with them in mylar. An O2 absorber will make them turn into a solid brick. They last forever without one, so no need to add one anyway.
