I am growing (hopefully) some vegetables. Given that there will be electricity ( I have a generator ). Does freezing offer a short term ( 1 year or so ) comparable to canning ?
There's a little more to freezing vegetables. Fresh picked veggies should be blanched for 3 minutes and then run under very cold water. This process stops the enzymes which cause the veggies to turn a brownish color. All frozen veggies from the store go through this process.
I do both but most of my food is canned, if the electric goes out for a long period of time the food in the freezer is done. Also remember, if the electric is out for a long time the gas pump at the gas station won't be able to pump gas for your generator.
The food that I canned will be good as long as it doesn't freeze.
Canning is much more time consuming, however tastes better (in my opinion).
Canning is also the smarter choice in my opinion because after canning they do not require any kind of cooking, simply open and eat or add as a side dish to any dinner. You can also try different and delicious recipes for you canned veggies.
I have been canning broccoli and brussel sprouts lately and trying a different recipes each time and each time i'm pleased with the results.
No point in all your eggs being in one basket, right? Freezing your veggies is much cheaper than canning them, but canned veggies store for much longer without any need for electricity to run the freezer. So, we freeze what we guesstimate we'll go through in about 9-10 months time, then can the remainder. Somehow we end up with lots of jars of veggies. :thumb:
I would not consider freezing for a year. Too many things could go wrong. Canning is what we do. We can one jar meals that will feed the two of us for a day, with added filler like rice or noodles. Our freezer is for normal life, not SHTF. If we have it fine, if we don't we are still fine. Betting a year on a freezer you will be screwed if you cannot run the genny. What if it breaks down? What if you lose your gasoline?
Since I am a huge supporter of the "Store what you Eat, Eat what you Store" philosophy, we do both here as well as dehydrating and the like.
The frozen get used constantly for meals and such down the road. If SHTF or whatever, we eat the frozen first and leave the canned and dehydrated for after we empty the freezers.
Don't forget dehydrating as a means of food preservation, as well. :
