they're both okay as stable iodine protection from radioactive iodine, but I believe Potassium iodate has a better shelf life.

From the readings that I've done, I'm starting to be a little skeptic about KIO3... just curious as these things are very new to me.

I feel the same way. I prefer Potassium Iodide over Potassium Iodate.

The CDC, and a number of other organizations endorse it:
http://www.bt.cdc.gov/radiation/ki.asp

And it has actually been tested in large scale events:

Potassium Iodate may work as intended (and is said to do so by the World Health Organization and suggested for hot/humid climates), but I'd rather go with tried and true since I live in a cold, dry place.

I live in a very hot climate but I have both stocked. KI03 is not bitter and can be broken down for children and they seem to accept it better because it is not bitter. KI or potassium iodide is extremely bitter and children have a difficult time keeping it down because of the bitterness. KI03 has a longer shelf life then KI.

Potassium Iodide is what the state of Delaware starting giving us
shortly after the 9/11 attacks. When it expires every few years, they
send out notices for us to go trade them in at the closest fire station for free.
