So now I need to know where to buy the wheat berries and what kind do I need for making break and just I general baking
I buy them at a local spice company, but I don't think that will help you. I did Google it and came up with a lot of places that will sell and ship to you. As far as what kind...... mine are a hard wheat berry. I think there are only 2 kinds. But I'm not sure. I'm no expert. I hope this helps a little. Good luck!
The hard red has the highest gluten content, but makes a heavy bread, which some people like. We prefer a little lighter loaf, so we use either the hard white or a half and half mix of the hard white and hard red.
Another option is the Latter Day Saints (Mormon) cannery, if you have one within a reasonable distance. There are several around the country.
They usually only sell to members of their church, but if you have a Mormon friend to go with you or that will pick up items for you when they go, you can purchase from them that way.
We have a local lady here who gets a big order up 3 or 4 times a year and makes a run to the nearest one to us. There may be someone in your area doing something similar.
A lot of food co-ops and/or "health food" stores will carry the whole wheat berries, but they are usually more expensive there. I used to get the whole wheat berries from a Mennonite store in the area where I lived. If you have a LDS cannery near you, they usually have wheat, and it is probably about the lowest price you will find. Not having any of THOSE resources, that leaves mail ordering. Honeyville Grains, Emergency Essentials, or the LDS website will probably be your most reasonably-priced options.
As for what type of wheat, hard red wheat and hard white wheat are good for baking bread, as it has lots of gluten in it. Soft white wheat does not have much gluted...it is what is used for "pastry" or "cake" flour. For an "all purpose" flour, mix equal proportions of hard and soft wheats. For "wheat sprouts", hard red wheat seems to be the preferred type.
I get hard white winter wheat and buy it from multiple sources...Emergency Essentials, a Mennonite store, Honeyville Grain, and LDS.
LDS is the cheapest @ $11.50 per 25#.
we use http://welterseed.com/default.aspx We actually drive up there and buy alot. They sell to the farmer that plants organic wheat for organic beef and such. It is the same thing but hell of alot cheaper than the health food store and the like. Last time we went it was around $16.00 for a 60# bag. One bag fills 2 sometimes alittle more 5 gallon buckets.
Just checked the site spring red wheat is 19.75 a bushel, or about 60 pounds. they also have rye, oats and barley...
