Dinner tonight. I've been in such a ham mood.
I picked up 1 pound of ham at the market today, but instead of slicing it, I had them slab it into 1/2-inch thick slabs, then I cubed that up and sauteed it in the pot until it was dry and golden.
Took out the ham and set aside, sauteed one medium chopped onion until soft added three cloves of garlic, then added two cans of basic chicken stock.
Chopped about 3 pounds of russets and cooked until really soft then hit the mixture with the potato masher, added the ham back in and then topped it with about 3 cups of whole milk.
Simmered about 30 minutes or so and made a batch of biscuits.
Not bad. I love the basics!! :
