Ok, finally took a bit of time to read some of these links and specifically concerning egg crystals. If I read correctly we are seeing egg whites only from this process. Yes?

Oddly, they speak of the resulting product being 'nutritious' but, what happened to my yolk? There is a lot of nutrition being lost here.

Yes, I realize I can use the whites to cook with but, is there a 'processed' egg that I can carry in my back pocket (so to speak) that still includes the yolk?

Please excuse my ignorance here.

Nutriom makes egg white crystals and whole egg crystals. They have a couple of websites, and I think the process info I linked to was from the egg white site.

Don't buy on the Nutriom site, however. Like many other manufacturers, they make it a point not to undersell their distribution network.
