Tonight, I was able to enjoy one of my loves.....Pizza.

I found a recipe online for a Cauliflower Crust Pizza.

One cup of Cauliflower, steamed, strained and mashed.
One egg
One cup of Mozzarella Cheese

Spread on a cookie sheet, on parchment paper

Bake for 10-15min at 450 degrees

Take out....let cool for 5 min, then add cheese and toppings of your choice.

Put back in the oven on Broil only, until golden brown.

TIP...we made the crust too thick....make it paper thin for a crispy, thin crust.

Good luck. I weigh myself once a week. I only lose 1 to 2 lbs a week if I'm lucky so probly wouldn`t notice anything weighing myself daily

Today marks exactly 14 days or two weeks on the diet and exercise and the official start of the 50lb Challenge.

I have lost 9.8 pounds
Averaging 0.7 pounds per day or 4.8 pounds per week.

That is significantly better than my original 1 pound a week goal. I know I am being a little aggressive with my diet and exercise, but seeing the weight go down is like a drug I don't want to quit. Besides, I feel so much better.

I am sure that the weight loss will slow as I drop weight, but I think my revised goal for the next four weeks is about 2.5lbs a week, or 10.1 pounds minimum.

Monday, March the 20th I want to see at least 259.9 on those scales.

Ok day 3 only lost a pound, 271, pizza slowed it down.

Need to pull that exercise bike out.
