1/4 cup Light Mayonnaise
1/4 cup Vanilla Yogurt
2 teaspoons Granulated Sugar
2 teaspoons Fresh Lemon Juice
2 Fuji Apples
2 large Stalks Celery
1/2 cup Almonds, slivered
Preparation:
1. Core, peel and dice the Fuji apples and dice the celery.
2. Add them to a medium serving bowl.
3. Stir in the slivered almonds.
4. In a separate bowl, whisk together the sugar, lemon juice, mayonnaise and yogurt.
5. Pour the mixture into the salad bowl and toss well to coat.
You can also make a good fruit salad dressing with cream cheese and enough milk to make it whatever consistency you like. In my family, we make "apple salad" of apples, chopped celery, chopped pecans or walnuts, and mayonnaise.
What my mom and we, later, always used for waldorf salad was apples, celery, thinly sliced pecans with good ol' Miracle Whip, thinned down with just a little whole milk.
