Don't let them go to waste mate, just leave them in the ground and harvest them as you need them.

They resprout if you miss any, and you can re harvest another crop, rather than waste any.

If a nuclear attack happened, your potatoes would be safely underground.

If government turned on you and you had to run, you can come back when the heat is off, and harvest your hidden food stores under the ground.

I surprized people when I harvested big potatoes in a open patch of country. They said wow, look how this bloke gathers wild tubers, he really knows his bush foods.

No mystery, I planted the potatoes in open country, most people leave it alone because they don't know what they are looking at. They die off on the surface, but underneath there is massive amounts of food.

Thats why sweet potato so good, it invades open country and most people don't know what they are looking at yet again.

Find public land and store your potatoes in it. Just get bags of potatoes and seed whole areas.
Don't sow the potatoes or sweet potatoes in rows, disperse them randomly. If it looks like a cultivated crop, people will harvest your crop.

Even growers who know what potato stalks look like, walk straight past them, because they are not expecting to see potatoes growing in the wild.

When the stalks die off, the potatoes are completely invisible to all, but you, who knows where they are.

Now imagine how long you could live in the wild, if you planted potatoes everywhere, thats right, forever.
Potatoes are the greatest nutrition that can be grown in the smallest area.

Leave small seed potatoes in the ground to resprout, and you will always have potatoes.

Trust an old survivalist and permaculture man, the best place to store your potatoes is in the ground, until you need them.

The green bits are a result of light; it is called solanine and in large amounts is a toxin. Most people just cut the green bits off with no ill effects at all. Storing potatoes in the dark will prevent the green.

1. wash and clean
2. steam until about 3/4 done
3. let cool
4. freeze

1. place frozen taters (potatos) in steamer, cook completley.

I gar un tee, they keep forever and will always taste great, with or without butter and salt.

In the old days they went very well with a cold beer, but that was when I still drank a bit.

No, I have never drank more than 5 cases of beer in 62 years, not a drinker as people think of drinking.

Pizza and cold beer went well together as well, those were the days.

You can put them in a cool place in some sand and they'll keep a long time.

LOL. Up here in minnesota, if I leave them in the ground, I'll need dynamite to get at them. The ground freezes hard as a rock down to 3 feet. My garage stays a nice 50 degrees. Things keep pretty good in there.

Just dig with all your might, it will keep you warm, and its a good workout.

Don't let a little frozen water stop you.

I grow my favorite potatoes all blue and all red because I can't find them anywhere. Since I live in Minnesota, I can't leave them out. I harvest them when it's getting colder, I let them dry in the finished area of my basement for a few weeks away from sunlight. I then package them in paper bags and move them to the unfinished area, where it's about 40 degress F. I usually have a few left when next planting season comes. If they begin to sprout too early, I just remove the sprouts if I want to eat them or leave them so I get a head start when I plant them. They last about 5-6 months. I do check them out once in a while and use the ones that are getting slightly soft before they rot. If you allow one to rot, the rest in the same bag will follow. I forgot don't wash them before drying just brush the dirt off, they'll keep better.
