I would think if careful & proper sealing of lentils and beans in a mylar bag would render them 'safe' to consume at a later date if storage temps, humidity levels and amount of natural light were lowered & stabilized...of course 'rotation' of stored goods is recommended...It depends somewhat on the latitude & altitude your storage area... Since you are in northern part of Florida... altitude is no-sweat but heat and humidity is a concern... I live a tad lower latitude than you (deep south Texas, ranch area) and I have my lentils & beans and a few other 'goodies' sealed in zip locks and stored in 5 gallon buckets with a moisture desiccant packet and placed in a cool,& dark insulated room at my remote BOL..after 8 months (fingers X'd) everything remains OK for consumption...BTW...You didn't mention the projected amount or quantity of beans & lentils you are trying to preserve....
