    Bunny, those things are all over the place, yet frustratingly hard to find! Food factories of all types use them for oil, sweeteners, etc. You might try craigslist, newspaper ads section, and doing some detective work to see if there are any food or beverage factories you can call. Sometimes there are shipping material resellers that resell stuff like that too. Used, they run $20-100.

    I did can 6 qt of bacon and then canned 6 qts of sausage patties. The sausage was bougt in bulk already seasoned but I have bought ground pork and seasoned my own, going light on the sage as it tends to overpower. I made patties just tad bit smaller than wide mouth jar opening. then browned them lightly on both sides but not cooked entirely. I then put them (6 ) in each wide mouth jar, filled jar with boiling water, poked inside to get air bubbles out,cleaned mouth of jar, put lid and ring on and processed in pressure canner for 90 min. at 10 lbs. Made some previously tried them couple weeks later and they were great. Just poured out juice put in fry pan and heated them. I hope this is the info you were looking for. I would bet that you could can the link pork sausage also. I have canned smoked kielbasa and it came out good. Unlike bulk meat the sausage links have a skin on bet you could just put them in jar raw , fill with water and process. I did my smoked kielbasa like that.

    Sorry, I thought you meant that you canned both. I had never heard of canning pork sausage. I was curious about it.

    Hi Bunny. I can recognize seasoned wood, but I haven't a clue how to tell someone too. Seasoned wood is dry all the way through. Maybe split a piece to check?
