    Thank you for the kind words ladies, I appreciate them but no credit due to me. I'm just a simple country boy raised by a good old fashioned grandmother and she taught me to call them like I see them.

    We have snow coming for the next 3 days and temps that might get up to 20 degrees durnig the day. Friday and this weekend we will be lucky to see 15 degrees. You wouldn't believe how much my old bones miss the desert.

    I never pickled hotdogs so that would be a question for somebody else. I only refrigerate my pickled eggs for 30 days till they are pickled then they go on the counter. I bought pickled eggs cheap from a bar in northern Wisconsin once on my way way home from Rhinelander. They were over a year old and none of his customers were eating them, I made an offer for the whole jar of eggs, he accepted, my brother and I had eggs to eat on the way home and he was out of the pickled egg business. In fact I still use that jar to make my pickles. The old eggs were fine. As long as the liquid covers the eggs you are good. Pickled fish went into the pantry after they were done but like my eggs they don't last long so I don't know about long term storage. Somebody keeps eating them. Mother in law was the pork hock eater and they sat on her counter but they never lasted long either. That might be a good question for the forum.

    And would the same hold true for pickled hot dogs, pickled pork. These are things that I wish I would have learned from the old timers on the farm before it was too late.

    Question on pickled eggs. I'm at the stage where I'm out of room but still want to stockpile. All my recent recipes say to refrigerate and I usually let mine sit out until I open for the first time, but I'm out of refrigerator space. I've seen opened jars sitting behind the bar for almost a year and they are still good, what is the life of a jar of pickled eggs sitting out. I'm thinking of pickling a whole bunch, if you fill the jar almost to the top it makes a seal when it cools and just wondering if I would have over a year of preservation.

    Perfect, makes me wish I was a kid on the farm again. We used to raise turkeys and ate turkey eggs by choice. I would have needed a bucket instead of a jar to get a dozen eggs pickled but I bet they would have been great.

    I have a quail who is laying and the eggs are too small for anything so I'm going to start pickling them and give them a try, one bite pickled eggs.
