My mother makes some fabulous meals with canned yams. She fries one of those flat ham steaks that have the little bone in the middle until it is golden and done. In another pan she puts a can of yams. She fries them with brown sugar, salt, pepper, and a little maple syrup until they are gooey, dark and form a crispy crust in some areas. It takes a while on med heat, don't burn 'em. Serve the ham with the yams and it is sooooo good.
